Cob "speaks" to me. It has many similarities to adobe - organic lines, thick walls, high thermal mass. It is easy and inexpensive to build in, albeit somewhat labor intensive. The ability to sculpt an organically flowing living space, though, is probably the most important attribute.
The image below is of Hilde Dawe's cob cottage, located on Mayne Island, British Columbia. It is an excellent example of what draws me to Cob.
